Why eggless baking is a good idea

Who says you need to have eggs to make a baked dish turn out well? You can do as good a job with other ingredients too. Egg is really a binder and with a few substitutions, you can get the similar effect and your red velvet, chocolate and vanilla cupcakes work just as well without it. Here are a few ideas to start with...


1. When making a cake, use sour curd as a substitute to the self-rising flour. Another often-used ingredient is unsweetened gelatin.


2. You can also use other substitutes in various dishes, such as vinegar, baking soda and flax seeds and soft, mashed banana. When using flax seeds, grind them with water and use the sticky, gelatinous mix.


3. To make cupcakes, use butter and yoghurt along with the baking powder, baking soda, sugar, chocolate and vanilla essence, for a fluffy, soft texture.


4. A Lebanese bread pudding dessert, Aish el Saraya is eggless, made with bread coconut, milk, cream, fruit rose water and orange blossom. It pairs well with Indian food as well.


5. Make a switch for your usual tea time cake and this time go for an eggless walnut-banana cake with bananas and baking powder.
